If you like some with a twist try this one.

Preparation time less than 30 mins

Cooking time 30 mins to 1 hour

Ingredients
225g/8oz cooked peeled prawns, fresh or defrosted
175g/6oz white crabmeat
1 small ripe avocado, peeled and thinly sliced
½ small red onion, peeled and thinly sliced
juice of 1 small orange
4 medium plain poppadoms
few sprigs fresh thyme leaves, to garnish

For the Chilli Jam
2 tbsp oil
3 cloves garlic, finely chopped
2.5cm/1 inch piece fresh root ginger, peeled and finely chopped
1 large onion, peeled and finely chopped
150g/5oz large red chillies, de seeded
125ml/4fl oz cider vinegar
2 tbsp dark soy sauce
2.5ml/½ tsp Chinese five spice powder
40g/1½oz light muscovade sugar

Method
1. Prepare the chilli jam: heat the oil and cook the garlic and ginger for 4-5 minutes.
2. Add the remaining ingredients. Bring to the boil, simmer for 30 minutes until reduced and pulpy. Set aside to cool.
3. Prepare the poppadom baskets: lay each poppadom over an upturned ramekin dish or small bowl. Microwave on high for 1-2 minutes (depending on the wattage of your oven). The poppadom will become a shallow basket.
4. In a large bowl mix the prawns, crabmeat, avocado, red onion and orange juice together.
5. Divide the mixture between the baskets, garnish with fresh thyme and serve with the chilli jam.

If you want this a bit hotter add some Tabasco sauce in the jam.

Enjoy ;-)
